A fresh and wholesome salad perfect for a weekday lunch . The rice needs time to chill before assembling the final salad so if needed, the rice can be cooked at least a  day in advance . Short or long grain brown rice can be used in this healthy salad recipe.

 

 

Ingredients

1.1 cup brown rice , cooked

2. 1 cup red cabbage, chopped

3. 1 medium size tomato , chopped

4. 1 medium size onion , chopped

5. 1/2 cup feta cheese ,

6. 2 tablespoons walnuts , chopped

7. 1/2 bunch fresh coriander , chopped

Dressing

1.1 tablespoon olive oil
2. 1 teaspoon red chili flakes
3. 2 tablespoons lemon juice
4. Salt to taste

Instructions:

1. In a large bowl , add cooked brown rice , chopped red cabbage, tomato , onion and feta cheese.

2. In another bowl , mix olive oil , lemon juice , chili flakes season with salt .

3. Now pour this onto cooked rice mixture and mix it well . Sprinkle chopped walnuts over it and garnish with fresh chopped coriander.

4. Serve now !!
