Creamed Carrot Toast

I’m not the one to gush over a toasts, but this pretty bright one I will .Creamed Carrot Toast is quick and easy to make recipe . It’s an easy recipe to share with family and friends !!

Here is a simplest , healthy and easiest recipe for a  flavorful savory breakfast, it can be your  appetizer ,  brunch or light dinner recipe too. Turn your  regular toast to a Gourmet toast easily by topping it with creamed carrot, egg halves and some micro greens !! The melted cream and mashed carrot are like match made in heaven . I literally threw in all carrots that I had in my fridge with the and result being finger licking good breakfast. Adding of micro greens over these toasts brings nutrients and vitamins which we need in our daily life.

 

A true comfort food , this recipe showcases  mashed carrot basking in a luscious fresh cream is a perfect example of tasty and healthy breakfast. It also works great as an appetizer !  You can keep the creamed carrot prepared ahead of time and when you are ready to serve pop some toasts in the oven and spread over it.

Ingredients

1.Garlic bread store bought , toasted
2. 3-4 carrots, boiled
3. 1/2 fresh cream
4.2 tablespoons Dijon mustard
5. Season with salt and pepper
6. 4-5 eggs , boiled cut into halves
7. Micro greens for garnishing

Directions :

1.In a medium size bowl, mashed boiled carrots and add cream, Dijon mustard and season with salt and pepper . Combine it very well.
2. Spread mashed creamed carrots evenly on top of each toast . Place egg halves over it .
3.Sprinkle micro greens on top of each toast.

4. Serve it immediately!!
