German Plum Cake

This German plum cake is a perfect summer treat that uses fresh plums season !

 

This plum cake is a German classic for coffee time and it’s a very popular dessert in Germany called Pflaumenkuchen in German .It’s a plum season and when we were given a basket full of fresh picked plums from my grandmother’s home in Shillong , what better way to use them first in a homemade cake!!

Underneath the crispy buttery cinnamon crumbles, the juicy plums will soften into a mulberry colored layer of jam when it is baked. You could replace the plums in this recipe with apples or pears. I love both varieties too.It is very easy to make and delicious , sweet plum flavor shine filled with fresh plums and topped with crumble. To make it more delicious, serve with a scoop of vanilla ice cream, whipped cream or custard sauce, it’s heavenly.

 

For Dough of making German Plum cake

1 1/2 cups plain flour ( you can use wheat flour too)
1/2 cup butter / cooking oil
1/2 cup white / brown sugar
1 teaspoon vanilla essence
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup milk

For crumbles :

1 cup plain flour
1/2 cup butter
1/2 cup white / brown sugar
2 tablespoons ground cinnamon

2 cups plums , washed and pitted

Instructions

First beat the butter or oil with sugar in a large bowl until fluffy . Whisk in the flour , baking powder and baking soda. Add milk and vanilla essence , and beat it till you get cake smooth batter.

Covet the batter with a kitchen towel and leave it to cool in the refrigerator for around 30 minutes .

Now make crumbled for German Plum cake :

While batter is chilling , now whisk together flour , sugar and cinnamon. Cut in the chilled butter and rub together until you get crumble texture . Refrigerate until ready to use , otherwise butter will start melting .

Preheat oven at 180 degree C.

Grease the spring form baking pan or any baking pan with cooking oil . Transfer the batter to a greased pan and with the help of spatula smooth the top.

Cut the pitted plums in half, and arrange them on top of the batter , skin side up and cover all of the batter. Scatter crumble over the plums.

Place the baking pan on the middle rack and bake the cake for around 30-35 minutes until the top layer turned into light golden colour and insert a skewer into the cake and see I comes out clear or not . Plums will remain sticky .

Remove the cake , allow it to cool for around 20 minutes.

Serve it as a brunch cake or as a dessert topped with vanilla ice cream / custard sauce / whipped cream or fresh cream .

To make this delicious plum cake for a crowd, you can double the recipe and bake on a sheet .

Note : For a more spicy taste , you feel free to add spices such as 1 teaspoon cinnamon, 1/4 nutmeg and 1/2 teaspoon cardamom, you can add 1 tablespoon of rum for a great taste in winters .
