Red Cabbage and Cucumber Salad

Here, I’m sharing my easy to make salad using red cabbage and cucumber which is  full of flavor from the instant homemade dressing !

This Red Cabbage and Cucumber Salad Recipe is a healthy and colorful way to incorporate more vegetables into our family diet.  I begin to crave lighter foods that  are fresh and raw as we start to head into summer . In this red cabbage and cucumber  salad recipe , I’ll be using  small cucumbers because they’re smaller and have little seeds.

And this is one of the tastiest ways to do with bright  flavors, a zesty tangy kick from lemon juice  and spice from red chili flakes  , the onion add extra crunch and some extra  protein by adding crumbled tofu made this salad an absolutely perfect delicious side dish.

Serving this delicious side dish will make everything else look more colorful to the plate.Once you try this salad, you’re going to fall in love with it. It’s full of nutrition and is super easy to make !

 Ingredients

Salad

2 cups shredded  red cabbage

1-2  small cucumbers

1/2 cup crumbled tofu

1 medium size onion, thinly sliced

Dressing

1 small lemon juice

1/4 cup olive oil

1 teaspoon red chili flakes

Salt  & pepper to taste

Instructions

1.Remove the outer damaged or browned layers of the cabbage and rinse it with running water. Then, quarter the cabbage and remove the core .

2.Now slice the red cabbage as thin as possible

3.Peel the cucumbers with peeler to get ribbons.

4.Thinly slice the red onion

5. Combine dressing ingredients in a small bowl and whisk until combined.

6.Place cabbage , cucumber and sliced onion in large bowl and add dressing. Massage dressing into cabbage, cucumber and onion, then set aside for 10-15 minutes.

7. Now place in a big plate . check for seasoning and adjust olive oil , salt and pepper to taste.

8.  Place crumbled tofu on top and you can make some roses from cucumber ribbons and decorate with it.

9. Serve immediately.
